I don't understand the reason behind the requirement that any user of this product MUST use a potholder. I bought this primarily because I do not want to cook food on an aluminum surface. Plus I didn't want to bother with scratched teflon products, and I wanted the ease of using 1 versatile pan for lots of cooking, saving time, money, effort.Sad to say, this did not live up to my expectations. What I really dislike most is the requirement of using a potholder for this. The lid handle gets extremely hot, fast. And to boot, Calphalon doesn't even offer a plastic "snap-on" doohickey to compensate (at least they didn't have any at the store). You know..we're in the 2nd millenium, and in my opinion products that make life easier are good. That is why I am stumped when it comes to products that make life more complicated. To be fair, Calphalon should have thrown in a free potholder in the box, or at least told me about it on the side of the box before I bought this. I am not crazy about the way this browns food either. I do alot of sauteing and I like being able to get fish fillets or chicken breasts browned on the outside. It gives it that extra dimension that I think makes cooking at home more rewarding. But this doesn't seem to brown very easily. I left some chicken breasts on this thing for 15 minutes more than I ever did with my Farberware teflon pan, and it still didn't brown much! Plus my fish filets were boringly soft on the outside, not to mention difficult to separate from the pan. 70 bucks is a investment for the kitchen, to be sure. I was, therefore, kind of bothered after cooking my first few meals with this that I had made a bad purchase and thought I would have to live with it for the next several years. So I eventually decided to eat my loss and buy a similar product. I got the Anolon 12" International Pan, which has a cool-to-the-touch lid handle, cool pan handle, and non-stick cooking surface. I cooked my first meal with it and it is a MUCH better product overall, at least for my needs. Who knows...perhaps the Calphalon will be good for some types of food. But I am going to bury my loss and put this thing in the cabinet and use my Anolon. It's much better to do that rather than making practically every meal with a poorly-designed tool that requires a ton of cooking oil.

Built out of 18/10 stainless steel that is impact bonded to a highly conductive aluminum bottom, it responds quickly to temperature changes and heats evenly across its entire surface. The brushed stainless exterior with mirror accents looks as elegant as anything with a higher price tag. And, thankfully, Calphalon seems to have discontinued its raised-dot interior surface in the stainless steel version of its Pots & Pans cookware; the dot pattern was intended to sear food and drain moisture, but many found it hard to clean.
