I've been looking for the perfect roasting rack for some time now and this is it. It's heavy weight and the entirely covered in a smooth, non-stick coating. The lifting handles are fixed in place but quite generous, allowing room for an oven mitt on your hand. I really like that the "ribs" are thick but widely spaced. They still support your food well but fewer "ribs" are easier to clean when you're done, although it is dishwasher-safe. Definitely the quality you expect from Calphalon. This rack comes in 2 sizes (this is the larger one) and I bought both. Since the lifting handles are fixed (they don't fold down) be sure to measure the roasting pan you will be using to make sure this will fit. If the size works for you, I think you'll be happy with this reasonably priced, well-designed rack.

Covering a turkey or joint of meat steams or braises rather than roasts, and placing it into a pan without a rack causes the lower part to boil in cooking juices--that's why a rack is essential for proper roasting. This big one fits a 17- or 18-inch roasting pan and will ensure a holiday turkey or rib roast comes from the oven browned evenly, filling the kitchen with an irresistible aroma. It's nonstick so turkey skin shouldn't tear when the bird is lifted to a carving platter. If necessary, scour with a nonabrasive cleanser and a nylon or plastic scrubber, and hand wash with mild detergent to preserve the nonstick surface. --Fred Brack
