Customer Review: Owned this for 3 years and it's a favorite pan

We use this pan almost everyday. It's VERY thick walled and has the ability to fry most beautifully. It's the width of a small fying pan and I use it to brown meat and fry french fries as well as make pasta. Anything that sticks to it comes right off if I "deglaze" the pan or soak it for a little while. I LOVE how it cooks evenly...the first pan I owned that - if I bring water to a boil in it - boils the same in the middle as on the edges.
It's impossible to destroy. We've been very careful to NEVER put it in the dishwasher - or use bleach products on it as that will etch it. It gets a bit grungy if I don't scrub it up with a green scatchy every once in awhile but it takes a good scrubbin just fine. I had 2 tiny spots etched into it when I spilled some dry oxy-clean onto the pan while it sat in the sink for a day or two before I washed it. However, after I used it for a bit, and scrubbed it with green scratchy a couple times the etched part has evened out and now is just discolored.

The handle never gets hot and even though the pan is extremely heavy, the handle is shaped perfectly balanced to work with it easily. I have carpal tunnal so it's important to me to have a pan I can work with.

The lid is so heavy duty that I use it to lay over bacon to keep the bacon flat, and to set on the top of anything I'm trying to grill (like a cheese sandwich or reuben) and it makes it grill nice and even and it works like a charm for a nice even golden brown --especially for some grilled garlic bread!

This is a pan that will be used for generations.

I've had this pan for a month and I'm very happy with it... it was my first Calphalon purchase and definately not the last, I have been hunting for bargains here at amazon since then because the prices seem to go up and down quite frequently. This pan has the thickest walls of all my Calphalon pots and pans, it's made in Toledo, as a matter of fact I believe that all Hard-Anodized items from this line are made here in the US and all the non-sticks are made in China (at least all of mine are). Unfortunately as this line is being discontinued this pan is one of the very few items available here at amazon or elsewhere so get yours... you'll love it if you just follow the use and care directions carefully (preheat, scrub, etc...)

UPDATE: I recently ordered another of this pans because I loved the first one. That one is made in Ohio, the second one I just received is made in China and let me tell you how I find them to be different:
The chinese one is just a little lighter and its walls are about 1 milimeter thinner than the one made in the US.
The anodizing is different: The chinese one is a darker gray in color and it feels somewhat smoother to the touch than the Toledo one.
Perhaps if I knew I would be getting a chinese item and after reading all the negative reviews about the Calphalon items of chinese manufacture, I wouldn't have ordered the second pan but after comparing both I feel that both are good and serve their purpose equally well. In my opinion the differences are only in appearance but not in functionality.

Customer Review: Not the cookware for serious home "chefs"

My first Calphalon (teflon coated) set was replaced in its entirety by the company. After pouring hot caramel from the saucepan, I noticed some of the coating from pan's bottom was missing. Not a good experience, A similar experience
occurred with another piece from same set. During a year's convalescence, our housekeeper cooked, cleaned, etc. Once able to get back into my kitchen, I was shocked at how horrible the cookware looked. Set was replaced at no charge to me with the Commercial Hard-Anodized product. Basic food sticks, (eggs, bacon) skillets especially are difficult to clean using just Scotch Guard pads (I've added baking soda on occasion to speed up process). Several pieces are discolored "almost rust-like" appearance. Yesterday, visited a major dept store in search of a crepe pan and the salesman recommended Calphalon. Emphatically, told him no and explained my experience. He reminded me of the Lifetime Warranty and recommended I contact the company. He also shared other shoppers have expressed similar concerns with Calphalon noting "It's not for the serious home chef."

I'm not certain I want another set of Calphalon in my kitchen. Considering going to a restaurant supply store and investing in a professional set of cookware. My dad gave me some pieces nearly 20 years ago and it was an amazing experience. Yes, he was a restauranteur and chef.

Calphalon is great for the occasional cook who wants attractive cookware donning his or her kitchen.

Customer Review: The Ugliest Calphalon Money Can Buy

This pot is like the ugly step child in my kitchen. It's hideous when compared to the other beautiful pots and pans Calphalon makes. While the pot functions beautifully and holds true to the quality of Calphalon, it's just plain ugly. Although the description says "Shallow" Saucepan, I guess I don't really know what that means because this pan is not shallow at all! It is very deep, and is a very big saucepan. Nothing sticks to it, and it is very heavy and sturdy. Even the lid feels unbreakable. But it's ugly. Note this pot is made in China. Most of Calphalon's stuff is made in Ohio, but their "cheaper" line, Simply Calphalon, is manufactured overseas by communists. If you look around Amazon, you'll find for ten more bucks you can get a beautiful piece of Toledo-made Calphalon that hasn't been beaten with an ugly stick. To me looks are everything, so I wouldn't recommend this one.
Some cons - I was expecting, with a lifetime warranty, that I would be able to throw this thing around and just send it back if it ever broke, right? Well, Calphalon gives you a long list of things you can't do to this - using non-stick cooking spray, metal utensils, put it in a dishwasher, stack them on top of eachother (what - stacking two pots on top of each other will void the warranty? Come on!), etc. After I bought my cookware set if feels like I have a newborn in the house.
But this is great quality Calphalon cookware at unbeatable prices at Amazon.com!

Customer Review: A great sauce pan at a remarkable price.

This 8 1/2" pan cooks exceedingly well, heating evenly and quickly at a medium setting, but one must turn the temperature control down very soon, or it will over heat. The bottom is absolutely flat (very important for the "smooth-top" radiant heat electric ranges) and a perfect size for the 8" cooking unit. It is not easy to find pans that mate so well with these smooth top electric ranges.
This pan is great to saute chicken breasts, or fish, cook vegetables with minimum oil or water, or prepare stews or chowders. I have not had any problems with food sticking, using very little oil; but, I suspect that those who have complained, have not realized how quickly this aluminum pan conducts heat. One must avoiding making it much too hot: set the temperature control lower than used with other types of saute pans. This one cleans easily with a little light detergent and a sponge or quick nylon scrub. The lid is lightweight and fits well; but, if it were glass, one could monitor the cooking more easily. Really, a Best Buy.

Addendum May 29, 2002: ... I still find this pan to be a great performer, and emphasize that it remains perfectly flat, and heats well on the smooth-glass-top electric ranges. [The good looking Revereware copper bottom pans have warped and are no longer optimal for use on the smooth-top electric range].
Highly recommended, especially so for those who cook on the smooth-top ranges.
