Customer Review: Own this and a whole set of these

I own this pan along with a huge set of this cookware. I like the way these pans and pots simmer but they stick like mad no matter what anyone here says. I also got as a free gift with purchase one of their stainless steel pans and it is a dream compared to these. They are not really making and selling these pots anymore out in stores. Its either the stainless steel or the nonstick insides with the anodized outsides. If I could return all the pans I purchased and exchange them for the stainless ones I would do it in a heartbeat. If you are just going to use these for simmering and boiling pasta and such they are ok but anything that needs browning or pan frying or the like including frying an egg will be hard to do in any of these pans.

Love the size and shape of this pan. I've sauteed meat in it. I've simmered soup in it. The pan is indestructible: I burned some chicken once accidentally, yet the pan cleaned up completely with just a little scrubbing. The handles are steel; they get hot. However, the pan can be moved from stove to oven to broiler, which makes it perfect for braised meats and browned toppings. The hard-anodized surface is not quite as non-stick as some anodized aluminum surfaces, but the durability and versatility of this cookware more than compensate for the small amount of extra effort needed to clean it. I like the entire Calphalon Commercial Hard-Anodized line of cookware; all the pans are well suited to real-world, every-day meal preparation.

Got this as part of their 4 for 3 promotion, so the price was right, but even for $15, they made a healthy profit. Handle looks like silver paint, not stainless steel as advertised. Pan is heavy weight anodized aluminum, but watch the heat, sticking is definitely a problem as many other reviews have told. "Commercial" line seems to come in two different quality levels. The good stuff is good, the cheap "China" stuff is really poor quality. Amazon sells both versions and it isn't easy to tell which one you're buying based on the listing. The Calphalon crepe and short-and-saucy pans I bought are really nice. This one and the everyday pan are awful. You definitely get what you pay for -- they aren't in business to lose money.

I was very disappointed to learn that this Calphalon was manufactured in China and not in Ohio. I felt deceived and have contacted Calphalon. They assured me that the same quality and care is given to the manufacturing process in China as in Ohio. My biggest complaint is that I was not given the option to decline made in china products over the true Calphalon. I have visited other sites since that sell discounted Calphalon and some of them reveal that the product is made in china. It appears that Amazon uses Ohio manufactured Calphalon marketing speak when selling the cheaper quality Calphalon that is sold in stores like Target. In my mind, this is a deceptive marketing practice. I have lost respect for Calphalon and Amazon.

This pan with cover is just the perfect size and shape when you're preparing any of the following for a small mob: caponata, chili, chinese cabbage or other leafy vegetable whose volume decreases with cooking, as well as for sauces. Its depth and shape are perfect for these items, all of which require the preparation of a roux and/or the sauteing of garlic, onions and spices in oil before adding the primary and more volumionous ingredients. There is no splash from the initial procedure, and no need to change pans for the second. Why unrated? I haven't tried it yet, so can't rate its qualities of evenness of heating nor non-stick-ness. And it's probably just as good for things that don't begin with "c."
