It's unfortunate that the description for this product says that it is "stick-resistant", because it isn't anywhere close to being a non-stick pan. But if you do a bit of background reading, or know a little bit about cooking, you'll realise that it's precisely this "non-nonstick" property of the pan that makes it great for searing meats and preparing pan sauces using the brown bits that are left stuck to the pan bottom.

I recently received this pan as a gift, and am thoroughly satisfied with it. It is sturdy without being heavy, and is a manageable size on the stovetop. The sides are flared, and higher than most frying pans, more similar to a saute pan. I believe this is why they call it an "Everyday Pan".

Calphalon (and other reviewers) recommend that you not put this pan in the dishwasher - this is probably good advice if you'd like it to last a long time. A useful trick that I use to get rid of pan-bottom residue is to fill the pan about half-way with water, then put it over high to medium-high heat until the water begins to boil. Basically, you're just deglazing the pan with the water, and the stuck bits will come right off if you scrape the bottom a few times with a wooden (plastic, etc.) spoon. Leave the water to cool for a few minutes, then just dump it out and give the pan a quick once-over with some soap.

I love this pan so far, and I think it'll be a great asset to me for a long time.

Customer Review: Everyday means EVERYDAY -REVISED

Used this pan for the first time last night. It's going to stay on my cookstove, not only because I'll use it everyday, but I haven't anywhere else to fit it. I cooked corned beef hash from leftover corned beef and potatoes cooked in the 8 1/2 quart saucier (now there is a term...why not a "two short handled pan") in the 12" everyday. Was the best ever, the hash got brown and crusty just like it is supposed to, my wife panicked that I was using metal utensils to scrape up the crust, I must confess, since it was the first time I used the pan I was a little apprehensive and did switch to plastic at the end. I cooked the hash on medium and kept turning the heat down. I did do the butter test and made sure the ingredients were at or close to room temp before I slopped them in the pan. At the same time I poached the eggs in the Commercial 9" everyday non stick pan. Perfect timing and perfect supper. The hard anodized pan did required soaking to get all the stuff off, but after about 20 minutes, a swish of the sponge was all that was necessary, clean, pretty, and no scratches from the metal. Love this Calphalon.
Here's the deal after 4 years..despite scrupulous care, the pan is warped, the finish is damaged beyond repair. It spins on the stove and cannot make even contact with the elements, really USELESS. I'd order a replacement, but the new Calphalon is made in CHINA and is NOT the same quality...back to All-Clad.

Customer Review: The best pan , I have..

It has been a very long hunt for me to find a pan that could be used for sautee, or browning potatoes etc..as most of the Non stick doesn't do this trick. I got this pan for a deal in Amazon for $18.00, and wanted to see if this is really good. Believe me! It is the Best one I possess till now..It took me some time to understand the feature of this anodized material..But once I understood it, it's fab!.

For best results, place your pan in Medium- Medium heat, pour a little dab of oil and season with salt and put the things to saute. You can get quick results because of it's intense heating material and cleaning is also trouble free. Just pour some water and after 2 mins, you will be able to wipe it off clean.

To point out the disadvantage, would be it's bulkiness in a small kitchen.Other than that, it serves all the purposes of saute,stir fry and what not!. It is great for simmering fluids too, and because of it's wide area, simmering process is faster.

Needless to say, it is the best in the market and Iam greatly happy with my purchase.( It requires little bit of understanding about Anodized properties, because I thought of returning the pan in it's initial days).I Own this pan for more than a year now, and it's brand new still,calling me every now and then, to cook something wonderful in it!

Customer Review: My New Favorite Cookware!

I read many of the reviews before purchasing this pan and the only complaint that stood out was that food sticks. Well because of so many great reviews I bought it. I Love It! So far at least. The very day it came I cooked steaks and yes, there was a little sticking but I have to say my steaks came out better than when we grilled them. And what stuck to the bottom easily came loose when I added a little wine to deglaze. So those who reported the same of easy deglazing were right on. I have been finding more ways to use this pan and have been very happy with the outcome of every dish so far. For those who reported of the bad sticking, from my experience so far, I'm led to believe that maybe they didn't let it heat up on a lower heat first. I think this is an important step not to overlook. I know that at times we're in a rush to feed our families but if you don't let it warm first, then be prepared the possibility of sticking. I've also found clean up a snap. The green scubber sponge works just fine, we also have a water softer system so I have noticed, that even before this purchase, dish washing became easier, less scrubbing so that may be a factor in the ease of cleanup. Overall I have been very pleased with this pan and look forward to adding more in the line. I gave it a 4-star rating only because nothings perfect, but this pan has come close. I hope this review helps you as the others helped me.

Customer Review: I own better Calphalon pans but none more versatile

I have been using Calphalon for over 15 years. I have frying pans, saute pans, big pots, small sauce pots, stock pots, a wok, etc. I bought this as a spare since it was priced so low. It's not the same quality as my more expensive pieces but it is still very usable and it's shape lets me be flexible with what I do with it. If I need an extra skillet, I have it. If need a saute or stir fry pan it will do the job.

But what I want to share is that even though I don't use it everyday I have given many of them away as gifts. I have several children that use these as their go-to pans. My single sons has learned to make quite a few things with this one piece. Pancakes, scrambled eggs, hamburgers, chili, the list goes on and on. The only other thing that they really need is a small (2 quart) sauce pan. I would thing that I would caution someone about is that they need to learn how to take care of an anodized pan. Yes, you can treat it badly but it will work better if you:

* Wash it by hand (none of my pots and pans ever see the inside of an automatic dishwasher)
* Don't use harsh detergents
* Don't use steel wool pads on it
* Don't use it without some type of fat (even Pam will work)

If you are looking for a reasonably priced housewarming gift that will get used you can't do much better.
