I bought this from Amazon and initially loved it. It was wonderful for paella, omeletes, sauces, etc. I was very careful to use it and wash it according to the instructions.
The cooking surface began to discolor and I bought the very expensive Calphalon clean for the hard anodized cookware. The discoloration remains, but the cleaner began removing the anodizing.
I also have one of Calphalon's non-stick omelete pans, and the non-stick has failed.
I have written to Calphalon, and they want me to return the pans. That presents a problem, for today's shipping prices exceed what I paid for the pans. I am in a metropolitan area - there should be a drop-off location, or Calphalon should use their vastly superior buying power to pay for the shipping. This is very unsatisfactory.
Calphalon sent me a UPS pick-up in November 2006. Just after Christmas, I received two new units. The everyday pan is not from China, and the hard anodizing is perfect. This pan does not cause sticking. The same can be said for the non-stick pan. The replacement is perfect - the eggs almost jump off the surface and NEVER STICK.

This is a great pan and a great value. I replaced my wok with this pan - the flat bottom is better on my electric (boo hoo) stove.It heats up really quickly and evenly, it cleans up easily. In fact, it is kind of creepy how things just come off with a sponge, considering it is not a real non-stick. I use a bit of Bon-Ami, rather than Comet for cleaning the any tough stuff. Benefits: cooks meat like a champ, makes a nice crust, and leaves little bits to deglaze the pan - I never got a good deglaze before with my nonstick pans, so I wondered what the big deal was. I'm not sure if it is my new attention to detail using this pan, or whether it is the better heat conduction, but I have made the best food ever since I got this pan. Only bad thing is that I can't get eggs not to stick (ugh! what a mess!) But I just bought a whole set of Commercial Non-sticks in 8/10/12 inch on Amazon for cheap. It just takes a bit of waiting. Total cost for 8/10/12 Commercial nonstick, plus 12" hard anodized everyday pan, about $85. Hard to beat! If you care about cooking, and especially if you like to cook meat, don't hesitate, just get this pan.

This pan is great. I hesitated to purchase it for several weeks based on the negative reviews. I was really interested in purchasing a hard anodized pan without non-stick coating (due to toxicity concerns) which is almost impossible to find anymore. After deciding to give it a shot, I could not be happier. A few things I realized after looking at several dozen reviews. A pattern seemed to appear. Firstly, who needs their pots and pans to look brand new after cooking with them everyday? If you are interested in performance and not appearance, this pan is valuable. It sears well, is great for deglazing drippings for pan sauces and makes the most magnificent crust. I use it often with excellent results on a standard stove. Secondly, I find that if I put water in to soak this pan first and wash it last after all other dishes, clean up is a breeze. Never had to scour or use Comet. Never had a problem sticking, still looks brand new (for all of those concerned) and the handles stay relatively cool on the stovetop. I like that the handles have a brushed finish. They seem lesser quality, but it serves a function. Great deal for $40.

I LOVE this pan - it's my 3rd year using it and seems to be the one I reach for constantly. Ordered it when it was about $25 and bought several to give as gifts. It arrived in a non-descript box - unlike the rest of my Calphalon Commercial stuff but who cares.:) It distributes heat beautifully, can go from the stove top to the oven to the table. My paella comes out perfect and it's big enough to make a meal for two or six. I've used it for 70% of meals. I even use its ample flat surface for steaming. Each calphalon surface is designed for different things so when some folks complain about sticking, it's because it's designed for crisp browning and works wonderfully. Unlike the non-stick coatings designed for no more than medium heat, this is awsome for searing. The lid is an added bonus because it's curved adding extra room on top. A value of something should be measured by the benefit and knowing what I know now, a $100+ or up tag would have been reasonable. SO happy that I didn't pay this much. Just ordered another as a shower gift for around $35 with prime shipping. Rediculous price and a million uses. Get it and you will not be sorry!

I ordered this product for myself and for a Christmas gift. I am terribly disappointed. Despite the Calphalon brand name, the quality is terrible and I question whether Calphalon has outsourced their production to the point where the quality of the non-stick is entirely missing. First, the pan is not as deep as described. But its real failing is that it is NOT non-stick. I cooked a number of receipes in it (rice dishes, sauteed salmon, fried bacon, omelettes, etc.) and all stuck completely to the pan. I tried PAM non-stick cooking spray, as well as liberal applications of the olive oil and despite these, everything stuck hard to the pan so as to require very hard hand scrubbing to get the food residue off. I actually had to buy a new kitchen scrubber to tackle the stuck food. By comparison, a well-seasoned cast iron pan and a cheap Wear-Ever fry pan seemed vastly more non-stick than this Calphalon. I cannot imagine the positive reviews for this product, unless there are extreme differences in production. Buyer BEWARE. Not a good buy. If it were possible to rate it with zero "stars" then that would be more accurate.
