There are many Santoku knives for sale. Calphalon's Contemporay Stainless model is perfectly ballanced and has enough cullens on each side of the blade so it never binds when slicing anything. There is ample clearance for fingers when dicing. This knife will last more than a lifetime.Customer Review: Versatile and Quality

I have the entire "Contemporary" Series set from Calphalon. The Santoku is the one I use most. The majority of my prep work is done with this knife (slicing, chopping, etc.) It is very sturdy and has a good blade.
