I'm generally really pleased with this knife: the blade holds an edge well, and it's very well-balanced. It's heavy enough to use in cleaver-type applications, but not too heavy as to cause fatigue (even in my very small hands).
My main complaint about this knife is that I tend to blister if I use it for real heavy prep work (I cook and prep--no shortcuts--a lot). This doesn't happen with my traditional chef's knife. I don't know why this is the case (the blister occurs where my fingers grip the bolster, so it's not the stainless handle), but it could be the weight.
I'm happy with this knife, and between my 2 large knives, I go to this about 45% of the time.
As for the santoku style, I find this most helpful when cutting potatoes: the slices adhere less to the blade, which makes it easier and safer to use.
AS is generally the case with knives, I would definitely recommend trying this out in a store before purchasing. This is especially important for this knife, because it is heavier than chef's knives, and the handle is just slightly larger.
Overall, I'm really impressed with this knife's quality.
