Kitchen and Housewares Reviews of Calphalon Commercial Hard-Anodized 8-1/2-Quart Saucier with LidCustomer Review: My new favorite pot Summary: 5 Stars
I didn't think I needed a pot this big- and this wide- until I read a few comments from chefs- and even then, I only bought it because it was so cheap. Well, since it's arrived I've put almost all my other big pots in the basement.
The width of this pot is the secret- it's wide enough to absolrb all the heat from the largest gas burner on my range, and with the large surface area, it's great for reducing stocks and sauces, too. For soup making it's far better than a deep pot; you can easily brown meats and carmelize vegetables right in the pot you're making the soup in, instead of doing them in a shallow pan and then transferring them to the soup pot.
I'm keeping one large, deep pot upstairs, for pasta, but for everything else, this is my new first choice.
Customer Review: Nonstick Summary: 3 Stars
This is not a nonstick pan. It sounds dumb... but it is closer to stick resistant... It certainly is not as nonstick as my Analon pans. But, I love the width - it's twelve inches wide. It is not wider than your other twelve inch pans... just compare them. Most people are surprised becase it is taller than any other twelve inch pan they have ever seen, and because few people have seen a pan that is taller than three inches and wide at the same time. Other than that, wash this pan gently. It cannot stand heavy duty washing. Even a scotch scrub is a little too harsh... Great pan, great great deal. You won't regret it. I use it for soups, braising and my large stir fries... like three or four servings of fried rice or something like that...
well, best of luck
Customer Review: A great but WIDE pot Summary: 4 Stars
I've been very happy with Calphalon Hard-Anodized cookware (I also have a saucepan and the 12'' everyday). It heats quickly and evenly, browns meat decently well, and is easy to clean. Taking good care of it (no harsh abrasives), I havent even had to resort to Bon Ami.
Just be aware that this saucier is quite wide (it also doesnt have rounded sides, so I'm not sure why this is a saucier and not a stockpot). Other reviewers have also commented on the amount of space that this takes on the stovetop, but that hasn't really been too bad for me (I cook with other large pans routinely so perhaps I'm used to it). The width of the pot instead is a bit of a tradeoff for me - great surface area, but limits the flexibility as a stockpot unless you are using large volumes.
Customer Review: warped bottom after 2 years Summary: 3 Stars
The honeymoon is over with this pan....it has now shown it's faults and betrayed me.
I really loved this pan when I received it about 2 years ago. So many uses; from soups and chili to one-dish meals that needed to simmer. It is big and hefty and when I got it out to cook with, it gave me confidence.
I didn't mind hand washing it and even forgave it for chipping my enamel sink.
Well, lately it has been wobbly and spinning and tilting on the burner.....the bottom has warped a bit even though I have cared for it as the brochure instructed. No more quick and even cooking because the whole bottom isn't making contact with the (electric) burner. Now, for me, it's back to my faithful Revere ware.
Oh well.....it was good while it lasted.
Customer Review: Ideal Chili Pot Summary: 5 Stars
I really like this pot for stews and chili. There is a lot of room to saute onions and brown meat before liquid is added, and its much more convenient to do so than in a taller/narrower pot. Liquids reduce quickly, its easy to stir without spillage, etc.
Also, I was pleasantly surprised to find that the lid fits my 12 inch saute pan (part of the 9-piece calphalon commercial hard anodized set).
As another reviewer said, the pot is large. I haven't had quite the difficulties she has in using it on my stove, however. I cant put another 12 inch pan (saute or everyday pan) on the burner in front of it and have it centered over the flame, but have no trouble with smaller pans.
And for the price, I really can't complain at all.
