Customer Review: My Most-used Pan

This has become the most-used pan in my kitchen. I use it for braising, browning, soups, stocks, stews, you name it. The construction is excellent -- typical Calphalon heavy-duty professional make.

When I bought it, I was looking for something that I could make stews and soups in. I've used stock pots in the past, but I don't really like "reaching in" to get at the contents. This pan is wide and low, and that's perfect for me.

What I didn't expect was that I would be using it for things that I've traditionally used other pans for -- browning and braising are two that come to mind. It's wide enough that I can brown a lot of meat at once, and then make the sauce with the leavings. It's perfect for braising as well. It's big, but I've found that I really like the shape. I have a small stove, and this pan fits on it nicely. Just small enough so that I can use the other burners.

Cleaning is easy. I use a brush rather than sponges, and it's the work of a few seconds to clean the pan.

In a determined-to-learn-how-to-cook frenzy, I bought the 8-1/2-Quart Saucier, the 12" Everyday Pan, and the 7-Quart Chef's Casserole on sale. Wow, what NICE pans! Now I know why I never could cook very well...the secret is in the pans you use. I feel like a pro using these pans, even if I'm not!

Now, I justified getting these pans because every time I turn around, somebody (who won't admit to it) has scratched my non-stick cookware and I have to throw it out. Also because the mark-down looked so amazing. But had I known how good the pans were, I wouldn't have needed a sale to make me buy them.

A bonus is that the lid to the Everyday Pan fits the Saucier, giving me a little extra height if I need it. It also perfectly fits my cast iron wok! And, in a pinch, I can use the lids to all these pans with my various cast iron skillets. I couldn't be happier with my purchase. They have been a very good investment, and they are so easy to cook with, lift, and clean. Every time I wash them, my family hears me say "I love my pans!"

Customer Review: One of Calphalon's most versatile pans

We have owned Calphalon pans for nearly 20 years now, and we love this pan more than any of the others. We can cook a large chicken, a small turkey, a whole batch of marinara, a standing rib roast, anything we want. What I really like is that it is about the same volume as my 8 qt. stockpot, but much easier to use due to being wide and flatter. It makes stirring so much easier. My husband can brown a whole cut up chicken, then transfer the entire pan to the oven to bake it. Clean up has never been a problem with any of my Calphalon, even when the pan is not prepped properly. We will never own any other cookware. I don't like the so called "non-stick" coating - they scratch too easily, metal utensils are a no-no, and the coating wears off. And yes, food will stick to "non-stick" coating, if it gets scratched or worn. And, since we own parrots, anything with "non-stick" coating is out of the question. Overheat a "non-stick" coated pan and the fumes will kill a parrot!

This pot is like a very wide sauce pan (the inside diameter is 12") that is just a bit deeper than normal. It's perfect for making one dish meals for a med/large family. I brown onions, meat, spices, etc, then add whatever liquid ingredients I want. It's nice having a pan where you can use high temps for searing & browning. It browns much better than a non-stick, and once you add the liquid anything stuck to the bottom comes off when you stir a bit. I have some nice stainless pans and this seems to conduct heat a little better. You do have to handwash this because using the dishwasher will mess up the finish, but it's such a large pot that you probably would have to handwash it no matter what it was made of. Cleanup is not a problem since once you pour in liquid most things come right off, but if something's still stuck, you can heat the pan again with water to help remove anything left behind. All in all, it's my favorite pan, and I much prefer using this pan to a regular stock pot.

Having suffered with the previous handle design from Calphalon, I was glad to see the arrival of this pan! Despite the hysterics about where it was manufactured, I find this saucier to be of the superb quality that I have come to expect from Calphalon. The cooking surface is huge, it conducts heat very evenly, and it is HARD. That translates to ease of use (any utensils you want to use are fine) and ease of cleanup. As noted, the handles on the sides and on the lid have been redesigned and are much cooler to the touch.

By the way, believe the reviews - this pan is HUGE! Prior to buying this size pan I hesitated, thinking that maybe I should buy the 5 quart version instead. As it turns out, that size probably would have been adequate for my needs. On the upside, I have discovered that I can boil great quantities of corn on the cob in this thing!

For this price, I recommend you buy one. You won't use it everyday, but you will find a lot of uses!
