Kitchen and Housewares Reviews of Calphalon Commercial Hard-Anodized 8-1/2-Quart Saucier with LidCustomer Review: Amazing Value! Summary: 5 Stars
I have been heavily using my Calphalon cookware for at least 16 years and they still look almost new. I couldn't resist purchasing this piece of cookware (despite the fact that I already own one) because of my experiences with Calphalon and the $29 price tag. Calphalon cookware is sturdy, well-constructed and virtually free from hotspots.
This dutch oven is no different. It is huge and great for making large batches of chili or soup for freezing portions. Because this dutch oven is so wide, it is ideally suited for thickening. It's also great for things like pot roast and stews since the dutch oven can withstand up to 700 degrees in the oven--much higher than you would ever need. It braises beautifully too.
Despite the fact that this is called a "saucier" it is actually a dutch oven. Sauciers have rounded bottoms that allow you to get into the all surfaces of the bottom with a whisk. Truth be told, I don't care what Amazon calls it. It's a great piece of cookware.
My one pet peeve with Calphalon cookware is that it cannot go into the dishwasher. Despite its "stick-resistant" finish, foods will stick nonetheless. To thoroughly clean my Calphalon, I use Barkeeper's Friend cleanser. It works beautifully and doesn't scrath. It's what I use for my All-Clad cookware as well despite the high-gloss stainless steel exterior finish. It's what the All-Clad folks recommend.
If you cook a great deal please do yourself a favor and buy this dutch oven before the opportunity passes you by. You won't regret it.
Customer Review: Unbelievable value for the money Summary: 5 Stars
When I received this pot from Amazon, I was amazed at it's huge proportions. Very Wide and solidly built. However, it fit on my stove fine, while nudging out a little room from the other burner, I didn't find this a problem because you can create an entire entrée in this one pan.
The point to this pot is quantity! If you have a household of two or more, this pot handles tonight's dinner with leftovers to spare. I was able to double my chicken fricassee recipe (two whole chickens!), and we ate for three days. It was an all-in-one process as the pan browned the chicken nicely without sticking and then accommodated the veggies and cooked evenly and surprisingly fast. The lid fits snugly and can be used to cover wide frying pans as well. The handles remain relatively cool and the sheer width of the pot lets you control sauté and braising like never before. This is truly restaurant-quality cookware!
And let's talk price - I'm a rabid bargain-hunter and did my research to find the best price. A'zon definitely had the best price going - for the same cost of an outing to Mickey D's for a hungry family, you can own this pot, which with proper care, will last for decades. Macy's & Bed Bath and Beyond priced this pot at $80+, and if I had paid that, I would still be happy, but $30? - I'm delighted.
Don't throw your money away with mediocre pots that start to chip and wear within months...step up to Calphalon and get professional results with quality and endurance.
Customer Review: Buy This pan, it's a steal! Summary: 5 Stars
I bought this item 2 yrs ago when it was on amazon for $39.99 & it was a great deal at that price, so now at $20, a steal! Pan is listed as a saucier, so translate that for this particular pan to also mean a big, generously sized, 8.5 qt. dutch oven (definiton of dutch oven = width of item is about 2 times bigger than the height). Perfect for browning, braising & roasting to obtain a nice crust for deglazing. Follow directions & pan will perform perfectly (heat pan a little B4 adding oil/cold food) & it will give u little problems w/sticking. But remember, this is a stick resistant, not non-stick product, so you will get some brown bits, just add liquid to deglaze them. Also excellent for roasting, stewing & soups. It's not a stock pot, which is normally designed w/a narrow base, high sides, so liquids will take a little longer to heat up in this pan. And it's big, 8.5 qts is a lot of pan. This is an older Calphalon style, hence the price. It isn't a more cheaply made product, even though made in China (normal these days for new Calphalon too). Performs identical to my other Calphalon, which means it cooks beautifully. Some staining is common for all hard andonized cookware, so this isn't a flaw, but rather a normal occurence. Discoloration mentioned by others is normal for hard andonized products, not an indication that any "coating" is coming off. Buy this if u need a big braiser/dutch oven/roaster & you'll be getting the deal of a lifetime.
Customer Review: What's not to like? Summary: 5 Stars
Like all Calphalon Commercial pieces, you are getting a high-performance, sturdily constructed tool that will make you a better cook. This saucier is wider and shorter than a typical stockpot, ensuring maximum heat transfer from the burners. It's great for such dishes as making chicken stock -- You can brown the chicken on the stovetop, then deglaze with water, etc., for a darker stock. Great for making soups, cooking squash, chili, etc. (Consider topping with cheese and sticking under the broiler for a few minutes to brown -- it's over safe to 700!) The combination of Calphalon's superior aluminum heat conduction and a wider top reduces liquids quickly, while cooks enjoy easy access into the pan -- something that can be tricky in a tall, narrow stockpot. Keep in mind that space can be an issue -- this stockpot can crowd out other pans on a small cooktop, and does take up an awful lot of space in your cupboard. One caveat: As with all Calphalon, you can not put this in the dishwasher (even if you could fit it in). The machine will leach out the Calphalon coating, causing pits and discolorations and void the lifetime warranty to boot! To clean, I find a little Bon Ami or Dormond cleaner and a Scotchguard green scrubber gets out anything without much fuss. Cleaning will be aided by proper deglazing. Also, you will find your food will stick less if the pan is preheated and if the food isn't ice cold when tossed in. Enjoy!
Customer Review: have to give it 5 stars Summary: 5 Stars
This is the second peice of Calphalon commercial that is "NOT" nonstick that I have...Everything else is commercial nonstick, but there are times when you need this type of pot. When you have to Braise a big roast for pot roast, or chicken etc.... I put a little olive oil in this and braise the roast, with vegies , wine etc, it makes the best french pot roast, with the stock to die for, then I finish it off in the oven for a couple of hours...yummmmm... For some of you people that complained about this pot being too big for your stove top, cause you don't have the big burners, you can buy the Large Caphalon Defuser at William Sonoma, and you won't have that problem, it will cook everything on top of your stove even. ((Think the defuser is only made from calphalon for William Sonoma only)) If you soak this big pot you should not have any problem washing it, Just make sure you do not put this or the lid into the dishwasher, or you will ruin it and void out the warentee. I think this is a must have, in your Calphalon Collection..I also payed less for this in amazon, but I hear that Calphalon is not going to be making there Hard-Anodized Cookware any longer, since they have come out with the Calphalon infused!!((call Calphalon and find out?)) Must say I love the Calphalon Commercial nonstick, but I do like the new handles better on the Calphalon infused. Happy Cooking....
