Never use shortening to season cast iron. Lard is what you need to get a black non-stick surface. To clean old cast iron, try leaving it in your oven during a self-cleaning cycle. That should burn off most of the stuff and not damage your seasoning, but a fresh wipe of lard afterwards is a good idea. To clean the really nasty stuff, I use my glass blasting cabinet to make it look brand new, then immediately season it with lard to get it black and rust resistant. Never wash your cast iron with soapy water, just use hot water and a scrubby/Tuffy pad.

love, love, love, this dutch oven, I have used it for everything from frying chicken and veggies, to cooking fresh peas in it, and it is great, one of the best multi-purpose pots I have ever had. Would recommend this to anyone who loves to cook.

Item first shipped had a flaw that made it unusable, vendor replaced it. Replacement item required a little grinding inside to smoothe it but is servicable. High marks to the vendor.
