Customer Review: Best coffee you'll ever make

My last coffee maker was the electric Bodum Santos, since discontinued, and I'm a big fan of this company and their vacuum coffee makers. There are lots of great reviews here with lots of raves and many great suggestions on how to use the product, so I won't reiterate what's already been stated by others. My five-star rating speaks for itself.

I do want to add a brewing suggestion that might be helpful to some of you though.

I like my coffee strong--Starbucks' average brew has become like drinking brown water to me--and one of the things that disappointed me about the electric Santos was that it had no way to brew the coffee longer for my taste preference. The user was just stuck with the preset Bodum brewing time. My only recourse was to use a LOT more coffee, which is not an ideal solution.

Thankfully, I was forced to try this product after my electric Santos broke a few months ago because this is now the only vacuum-style Bodum makes. Problem solved.

With this one you can keep the pot on the burner and let your coffee brew as long as you'd like, to your taste.

Here's my method, arrived at through many tastings and trial and error:

1) Follow the manual's directions right up until the water in the lower pot starts to boil. For me using an electric stove, I just crank the thing up to the highest setting and wait for the burner to turn that familiar orange-red and the water starts to fill the upper chamber.

2) Immediately after all the water has gone into the upper chamber and is starting to boil with the coffee grinds, I knock the stove setting down to a 1 or 2 but keep it on the burner (contrary to what the manual says). You really have to watch the thing and catch it right as this happens or you may end up with a mess all over your stove.

3) I set a timer for 5 minutes at this point and just let the coffee brew. You're pretty safe if you keep the burner at or under the "2" setting, and can walk away without worrying about it. It's a high enough temperature that the coffee won't go back down to the lower chamber, but also not so high that it will boil over or the glass pot will crack.

4) At the 5 minute mark I turn the burner off completely, but let the pot continue to sit on the burner as it cools down. It usually takes a few minutes before the coffee starts to make its way down to the lower chamber, so I figure my total brewing time is usually around 7 minutes total.

5) As soon as the coffee starts rapidly moving to the lower chamber I take it off the still-warm burner and move it to a cool surface. This ensures the complete transfer of all the coffee away from the grinds, and you'll hear that "sucking" sound that others have mentioned in their reviews.

That's it! Serve immediately or put it in a thermal carafe. Best coffee I've ever tasted anywhere--restaurant, coffee shop, homemade, or otherwise.

I hope that works for those of you like me who like your coffee strong (but NOT bitter).

10/17/09 Update:

I have to add a caveat to my review...I also wanted to remove one of my five stars, but apparently Amazon won't allow that once your original review is posted.

While I stand behind the review above in terms of performance and the end result (best tasting coffee I've ever had) I have become disillusioned with the product's build quality, specifically the fragility of the main glass pot (the one that sits directly on your stove burner). After owning the product for only two months, I have had to buy TWO replacement pots from Bodum to replace broken ones. In both cases the pot cracked after only a light tap on a hard surface. I have very few other glass items that would suffer any damage after such a light bump, and I really feel Bodum could have made the product more sturdy.

So while this is still one of the best coffee makers you can own from a performance standpoint, it is an EXTREMELY high maintenance product and needs to be handled with care to avoid breakage.

There is a good reason you can find a SANTOS coffeemaker in nearly every Scandinavian home, this vacuum brewing system has been fascinating coffee lovers for over sixty years. In the fifties, Peter Bodum, the father of today's owner, Jorgen Bodum, imported an French vacuum coffee maker and sold it on the Danish Market. Although he found it both unsatisfactory and expensive, he was convinced that the vacuum brewing system was an excellent way to brew an exquisite cup of coffee. Thus, the first Bodum Santos vacuum coffee maker was born. In collaboration with Danish designer Kaas Klaeson, Peter Bodum developed what we know today as the SANTOS, establishing the credo: ?good design doesn?t have to be expensive?. The magic of the Santos holds both adults and children spellbound as they watch the boiling water rush from the bottom glass jug to the upper one where it gets mixed with freshly ground coffee. After a few minutes off the stovetop, a vacuum forms in the base which pulls rich black coffee through a filter and back into the bottom jug. This captivating process combines the ideal water temperature with just the right brewing time and makes for superb results. Whatever your preferred coffee and roast, the Santos vacuum system brings out the very best aromas in your cup.
As beautiful as sculpture, as fascinating as chemistry, and as entertaining as theater, this coffeemaker from Switzerland converts the ordinary process of brewing coffee into an artful performance. And it makes six 5-ounce cups of full-flavored coffee while it entrances. The coffeemaker fits together like this: water goes into the carafe, a filter fits into the mouth of a tube in the top globe, ground coffee goes into the globe (a scoop is included), the globe fits atop the carafe with the tube extending into the carafe, and the carafe goes onto the stovetop with a trivet or heat diffuser between it and electric or gas heat. (This is all much simpler and quicker than it sounds.)

Water boils up through the tube into the globe and brews the coffee. When brewing is complete and the carafe has been taken off the stovetop and set into its accompanying sculpted trivet, the coffee drains through the filter into the carafe. The globe can then be lifted off the carafe and set on its stand, and coffee can be poured from the carafe, which has a stay-cool handle. A stopper for the carafe keeps second cups warm while the first cups are sipped. Fully assembled, the coffee maker stands 11-1/2 inches high.
