When I found this knife at the discounted price for which I got it, and realized I could get a Shun and not get kicked out of the house for spending that much on one knife, I had to grab it.
Anyone who works with blades will tell you how much safer a sharp blade is than a dull one. I first used this knife to cut some slices of orange rind for a marinade. I was able to cut slices thin enough to see through.
When I dice onions I use Alton's suggested method that involves cuts in three directions, one of which is parallel to the cutting board. My other knives are thick and drag through the onion, either creating too much resistance or pulling out previously sliced bits. Not what I'm aiming for. This knife is substantially thinner and has much less drag - the procedure is safer, quicker, and results in fewer tears (either from missed cuts or the onion juices!)
I can't wait to get a full set of these.
