Kitchen and Housewares Reviews of All-Clad LTD 12-Inch Round Nonstick Grille Pan

Customer Review: A fine example of a nonstick grill pan - but nonstick grill pans are a flawed concept. Also - it's not "clad".
Summary: 3 Stars

I'm a big fan of All-Clad and have a lot of All-Clad LTD and MasterChef pots and pans. I feel All-Clad has a great design methodology and makes great quality gear. Also, their non-stick coating is the best in the business. This grill pan, however, isn't actually clad - the secret of its low price. It's made from a single piece of anodized aluminum - like a Calphalon pan - as a brief examination of the edge reveals. The beefy handle is the most All-Clad thing about it. The nonstick coating isn't the usual All-Clad type either - although it certainly is top quality. As a grill pan, this one is very good - that's not the problem.

Grill pans make grill marks on your food - but are no substitute for actually grilling. There's no smoke flavor or high heat caramelization. The only thing the grill pan gives you is the sear marks. To that end, the nonstick surface fights you. Metal gives much better sear marks than nonstick coatings. In order to get a nonstick pan to give good sear you must really crank the heat up. This makes a lot of smoke - which make a good lid a necessity. Sadly, this pan doesn't include a lid. I found that the Calphalon 12" "Everyday" pan's lid is a perfect fit by coincidence - so I use it every time.

I have the luxury of a grill outside my kitchen door. I'm the kind of hardy soul who has no problem stepping out in the snow in shirtsleeves to flip the steaks. I find all grill pans to be a very poor substitute to actually grilling. Maybe if I lived in the city and couldn't grill as easily I'd be more enamored of this pan. As it is, I mainly use it under duress (such as during bad rain storms when I reluctantly must grill indoors).

Customer Review: My introduction to decent cookware
Summary: 5 Stars

I'd heard people wax on about why they spent a fortune on things like pans or knives, but I honestly never thought there was much difference; I thought it was more a status thing, you know, like blue jeans are blue jeans no matter what brand is on the label.

This pan changed my mind. I didn't know that my cookware sucked until I got this. (I only have two other All-Clad items, my fave being the two very-oversized ramikens.) Suddenly I understand why cooking seemed hard to do well. I don't have slightly burned and slightly undercooked food together in the same pan anymore. I don't have to worry as much about burning things before they cook through.

I've made damn near everything in this, and everything I ever tried to cook in this pan worked flawlessly. I have an old stove with square burners, so the 12" size means any pan on the adjoining burner behind it needs to be a small one, but that's ok -- because I can cook two BIG steaks in it comfortably, or a heck of a lot of food, and more than one thing at a time when needed. My boyfriend visited and cooked for us, and fell in love with it.

Now I have this 12" grille pan, a good wok, a Calphalon omelette pan and a good soup pot and I don't even use any of my other cookware. A few silicon baking pans and spatulas... those alone and my kitchen is complete. I should probably just get rid of 80% of my cookware that I ceased to need once I got a few pans so good they became All-Use items.

Used to be hard to find All-Clad stuff for under a hundred bucks. Each Christmas I come to Amazon and buy myself one All-Clad item. This year I'm buying one a second time, for my boyfriend's house.

Customer Review: Don't hesitate...buy this pan
Summary: 5 Stars

This pan has become my most used piece of cookware. It grills anything from fish to vegetables with nothing falling in the grate or falling apart because I couldn't control the heat. It is large enough for fast meals for four. I grill salmon two or three times a week. I like to get a crisp, but not burned, grill marking on the fish, and this pan does it perfectly. I don't even use my hard-to-clean JennAir grill parts anymore, and I haven't felt the need to replace my broken outdoor grill. The nonstick is great...no burning and easy, easy cleanup even though the pan surface is not even. I like the stay-cool handle also. The exterior hasn't gotten discolored, but I have used Barkeeper's Friend on other pans without scratching.
For average thickness salmon filets, I heat the pan up for two minutes on 8; then cook the flesh side about 3 minutes, flip and cook the skin side about 2 1/2 minutes, flip it again and remove the skin leaving it on the flesh side for a minute or so depending on how well cooked the fish is getting, then I like to flip it one more time to sear off the gray fat part that is under the skin while the fish finishes cooking. If I can put a fork in easily, the fish is usually done. If the filet is particularly thick, I will sometimes take a knife and cut the filet in half (portion size) to speed things up in the finishing stage. Then I can see when the fish is perfectly medium to medium rare and not overcooked. Heart healthy and fast! Add some slices of grilled eggplant brushed with olive oil. Bon appetit. Those grilled eggplant slices make fabulous vegetarian lasagna or mousakka.

Customer Review: Fantastic Grille Pan
Summary: 5 Stars

This All-Clad grille pan has tremendously enhanced my cooking. I use this grille pan nearly every single day, making such a wide variety of foods in it. My latest was marinated flank steak that was beyond incredible. I grill corn on the cob and other veggies, pineapple, chicken, fish, potatoes... well, so much. Anything I'd put on the BBQ outside I cook in this grille pan and then some.

I'm also especially impressed with how evenly it cooks, how easy it is to clean, and how well balanced and easy it is to use.

Initially when I unwrapped it I thought it would be too big for my stove; however, I was so, so wrong. The size is incredibly great.

For example, I grill entire sandwiches with the bread, meat, veggies, and other fillings for it, and it all fits in the grille pan. I also grill various meats and seafood and grill the veggies right along in the same pan. So its size is incredibly handy for one-pot meals.

I can also fit several chicken breasts in it or chicken thighs or several salmon steaks or fillets, etc. It holds quite a bit easily.

More recently I bought a glass lid to fit this Calphalon Contemporary 12 Inch Glass Cover (it's Calphalon but fits perfectly), and I also bought this pan and lid as a gift for a family member who also loves it.

So, I can't say enough good things about this grille pan that I use constantly. Love it and highly recommend it.

Customer Review: All-Clad LTD 12-Inch Round Nonstick Grille Pan - The BEST!
Summary: 5 Stars

I am not a big fan of the All Clad LTD line but I do love this pan. I much prefer the All Clad polished stainless steel line (I have almost every piece and love it). This grill is a perfect size for grilling for 1-4 people. I debated on the grande size, I decided that since I don't grill everyday it didn't make sense to spend the extra money and deal with storing the larger size. Also, I selected the round style over the square, my stove burners are round so I figured that the round style made more sense for me.

I often marinade chicken tenders in Emeril Lagasse's marinade (he has several different marinades that you can find in your local supermarket) a day in advance and heat up this pan and toss on the chicken. I usually make a veggie or two and some rice, it is a very quick and easy dinner and is also very healthy! You can also use this pan for everything from burgers to a tuna steak.

This pan is not dishwasher safe due to the nonstick surface, but don't worry it is a breeze to clean. I have the George Foreman grill that has been sitting in the cabinet collecting dust since I bought this pan. I don't like the George Foreman grill because you can't really wash the grill surface very well. The grill surface should be removable so you can really clean it. This pan is very, very well made and is backed by a lifetime warranty. Sometimes this pan is sold as a special..., if you see it grab it. It is a steal at that price. Once you try All Clad you will be hooked too! Highly recommended! A+!
