As a stingy person by nature, spending $700 on a set of pots and pans is a real issue for me. As I've gotten older though, it has become painfully obvious that to find high quality goods these days you really need to spend a lot of money. All-Clad hits that mark. I just retired a set of Calphalon non-stick cookware, they are right now at a garage sale and might bring in $25. After about 6 years, non-stick surface on the 1-qt,2-qt and 10-inch fry pan were starting to seriously deteriorate, the non-stick retained smell of some foods(eggs/onions/etc) regardless of vigorous washing, and at least one pan just failed to be non-sticky.

After a few days cooking with All-Clad, I'm amazed. I have fewer problems with sticking than I did with my "non-stick" pans, they seem to heat faster, and they no doubt heat far more evenly. After making eggs for the first time I was shocked at the difference. After making pancakes for the first time, my wife called me at work in slight shock at how evenly they cooked.

On top of all of this, if I decide I don't want them, I can probably resell at 70-80% of retail. Not bad in my book.

This fry pan got the best rating from America's Test Kitchen for frying pans. I bought it from William-Sonoma at a nearby mall since it'd cost about the same. They're always $125 just about anywhere you'd look.

It's a really good pan. But you have to be careful about what you use to wash it since it is stainless steel. If you're going to scrub it with like scotch brite pads or something, make sure you scrub it in circles. I think the polished circles are suppse to help the pan do some sort of magical thing or something. :-) Distribute heat better or something.

I don't think America's Test Kitchen got around to reviewing the new copper-core fry pans from All-Clad. Copper is like one of the best conductor for electricity and heat behind Silver. Since no one is going to be making a fry pan with a silver core anytime soon because the silver would probably melt, you may want to look into a copper-core version of this pan if you want a pan that would heat up really quickly.

But be careful though. You may not want your pan to get too hot too quickly. Depends on what you want to do. :-)

This All-Clad 12 inch fry pan is a staple in our kitchen. We use it almost daily. It heats evenly, food browns beautifully, and it cleans up great. We've found ourselves buying more and more All Clad pans despite their expensive price. They are worth it. We now eat better meals and they are actually easier to cook in these pans. A pan that heats and cooks evenly takes away the frustrations of cooking. When we aren't using this pan we are usually using it's cousin the non stick version (we like that for things like chicken parmesan that use cheese). We use this pan for things like pork chops or t-bone steak that we sear on the stove and then transfer to the oven to finish cooking. We love that this pan goes from stove to oven seamlessly. We also use this pan when we're browning meats and then making sauces from all those yummy brown bits for dishes like chicken marsala and beef burgundy. It also works perfectly for sauteeing shrimp or vegetables (we use it to saute sliced squashes and bell peppers often). We highly recommend this pan.

I just got my pan after waiting almost 5 weeks for delivery. BTW... don't order from here. They ship directly from All-Clad and it will ruin the handle on your new pan because of the way All-Clad packages them.

I used it after cleaning it the first time. I cooked some eggs, slid right off. I then had to make a marinara suace from a recipe that called for carmelizing the tomatoes. They got good and cooked evenly over the bottom and when I de-glazed, the tasty bits came right off and melded right into the sauce.

Clean up was very easy. A light scrubbing with a blue scrubby backed sponge and everything looked new again.

To those who say this pan sucks, learn to cook. The right temperature is everything. If you need to experiment, start out cold, not hot and work up. This pan will not make foods stick, poor technique absolutely will.

And, if you hate it that much, I'll buy it from you. I could use 2 or 3 more of these beauties.
