These were the first flexible mats I've purchased. I liked the idea of being able to fold up the mat and funnel whatever I'd bee chopping into a pan. I washed them when I got them and they have not been flat since. They bowed quite considerably. If I put the bow down everything rolls off, but if I put the bow up, then everything rolls to the center. I've tried flattening them out to no avail. They do prevent the knife from reaching the counter, so I suppose they perform one of their intended duties, but I would not purchase them again. I think I'll be content with scraping my cutting board with a knife.
